Caramelize Onions

Caramelize thinly sliced onions in  a mixture of butter and oil.

After the onions reduce significantly, stir in the flour and brown for about 3 minutes to form a thick paste.

If a thick paste does not form, add a bit more butter...

Deglaze the pot

- Add in the beef stock, wine, sage and bay leaf.  - Simmer soup for 30 minutes.

Make the "croutes"

Drizzle each slice of bread with olive oil and toast for 15 minutes on each side.

Assemble the dish

- Place the small casseroles on a baking sheet.  - Sprinkle each with cheese. Bake and broil.
