Make this zesty Italian pasta salad for the perfect side dish to bring to potlucks, barbecues, and cookouts! Made in under 30 minutes, it’s full of fresh vegetables, tangy Italian dressing, and feta cheese. Plus, it couldn’t be easier to customize!
1poundtricolored rotini or other spiral shaped pasta noodle
3ouncesblack olives(sliced and drained (one small can))
¾cupItalian dressing, plus more as needed(storebought or homemade)
1pintcherry tomatoes
¼cupbanana pepper rings(roughly chopped)
1bunchGreen Onions(chopped for garnish)
1cupfeta Cheese(crumbled, any flavor)
2teaspoonsoregano(dried)
salt and pepper to taste
Instructions
Cook pasta according to package directions. Drain and let cool.*
To a large mixing bowl, add cooled pasta, olives, whole cherry tomatoes, banana pepper rings, chopped green onion, feta cheese, seasonings.
Stir gently to combine.
Add approximately 1/4 of the bottle of Italian dressing and stir.
Taste for flavor. Continue adding dressing as desired.
Place in the fridge until ready to serve.
Transfer to a serving platter and serve chilled.
Notes
*Spiral Noodles: I always use the multi-colored rotini noodles as they add a beautiful color, and the shape allows the dressing and flavors to get into each nook and cranny. BUT, you can use any hearty noodle you prefer.
