(or trimmed and cut whole carrots into 1-inch pieces)

Instructions
Preheat oven to 450F. Add carrots to a mixing bowl. Drizzle with olive oil and salt and pepper. Toss to coat.
Transfer carrots to an extra large rimmed baking sheet, lined with parchment paper. Roast for 30-40 minutes, stirring once or twice during cooking.
