Irish Beef Stew

This thick and hearty beef stew is the ultimate comfort food recipe. Savory flavors from Guinness, beef stock, carrots, onions, and potatoes!

Step 1:  Prep the ingredients

Cube the chuck roast, slice potatoes and carrots, dice the onion... This recipe calls for chuck roast, but reference the link below for substituions.

Step 2:  Sear the Beef.

Working in batches, sear the beef on all sides until browned. Remove to a plate and set aside.

Step 3:  Sauté onion and garlic.

Add butter and sauté the onion and garlic until tender and fragrant - about 5 minutes.

Step 4:  Deglaze the Dutch Oven.

Remove all ingredients from the pot and pour in the Guinness to deglaze. Scrape up browned bits from the bottom with a wooden spoon.

Step 5:  Add all ingredients to the Dutch Oven

Add all ingredients back to the pot and stir to combine. Cover and simmer on the stove for about 2 hours or until the beef is tender and cooked through.

Step 6:  Serve

Serve the beef stew over rice or a pillow of mashed potatoes. Enjoy!
