Lasagna Soup

This easy lasagna soup is a warming, cozy, and comforting dish that’s great for cold weather months!

This lasagna soup recipe is all about versatility. I love that I can swap ingredients around and use up whatever leftovers I have on hand.

Lasagna noodles  Italian sausage Yellow onion Olive oil Oregano

Ingredients:

Bring a large pot of salted water to a boil. Add the noodles and cook according to package directions. Drain; drizzle with olive oil and toss. Set aside.

Heat 1 tbsp olive oil in a large Dutch oven or heavy-bottomed pot over medium-high heat. Sauté the onion until softened.

To the same pot, add the sausage and cook, stirring and breaking up the sausage with a wooden spoon, until the sausage is browned.

Stir in the garlic, oregano, and dried basil. Add the tomato paste and cook, stirring, until darkened, about 2 minutes.

Add the beef broth, tomatoes, and salt and pepper. Stir to combine.
